The Story
How it all started
A man, a dream, and six bar stools
Declan "Dec" Murphy quit his job at the county council, took out a loan he probably shouldn't have, and opened a pub on Quay Street. The first night, he served twelve pints and lost money on every one of them. But the craic was mighty, and that was enough.
The kitchen that started with toasties
What began as cheese toasties behind the bar grew into a proper kitchen when Dec's sister Maeve started making her Irish stew on Saturdays. The queue went out the door. They haven't changed the recipe since. They never will.
The quiz that never stopped
Rory started a Tuesday pub quiz "just for a laugh." Twenty years later, it's still going — the longest-running pub quiz in Galway. Teams have broken up over disputed answers. Friendships have been tested. It's glorious.
The snug, the back room, and the beer garden
The pub doubled in size. The back room became the live music venue. The snug became the most fought-over seats in town — four chairs, one table, and the best spot in the house. The beer garden appeared when Dec knocked down a wall he wasn't supposed to.
Next generation, same soul
Dec handed the keys to his son Ciarán. "Don't change the stew, don't water the Guinness, and don't let the music stop." Ciarán added craft taps and a proper whiskey menu. But the stew, the Guinness, and the music remain exactly as they were.
